Vegetarian Savory Farmhouse Muffins

Good morning, world! 

I am enjoying the most delicious, savory, yet, still sweet muffin this morning & had to share the recipe with you so that you can enjoy them with me! They are SO good! Not only are they tasty, but they make a great grab & go Breakfast that is both yummy and filling.

The moistness of the muffin & maple flavor from the vegetarian sausage makes the Muffins taste like pancakes, but hand-held & without mess! The Jalapeños give the perfect amount of heat/flavor. The cheese crust ties the whole thing together & gives a little crunch. They are seriously the PERFECT savory Breakfast muffin if you ask me!

I hope that you enjoy them as much as I do!

Ingredients

  • 3 cups all-purpose flour
  • 3/4 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon sea salt
  • 1 stick salted butter, melted
  • 3 large eggs
  • 3/4 cup whole milk
  • 1 tablespoon Minced pickled jalapeño
  • 1 tablespoon dried Chives
  • 3/4 cup Shredded Sharp Cheddar, + extra for topping
  • 4 oz cream cheese {warmed 30 seconds.}
  • 3 Morning Star Farms Maple Flavored Veggie Breakfast Sausage patties, warmed.

Directions

  • Preheat oven to 375° & grease 12 count muffin pan, set aside.
  • Heat Morning Star Farms Maple Flavored Veggie Breakfast Sausage by your preferred method on package, Crumble into bite size pieces using a fork, then set aside.
  • In a medium mixing bowl, whisk together: flour, sugar, baking powder, and salt.
  • In a large mixing bowl, whisk together eggs, milk, & melted butter.
  • Pour flour mixture to liquid mixture, stir with a rubber spatula until combined. Fold in jalapeño, cream cheese, Shredded Cheese, and Chives. Finally, fold in vegetarian sausage.
  • Scoop mixture into each muffin tin, filling evenly until all batter is used & top with Shredded Sharp Cheddar Cheese.
  • Bake for 20 minutes. Cool for 5 minutes. Enjoy!

Ukrainian “Care Package” 💙💛

My parents & oldest son are traveling up to Cleveland to visit my cousin, Sandy, & her husband, Robert, and spend some time at Cedar Point Amusement Park this week for my oldest son’s 14th birthday! It is one of his favorite Amusement Parks.

When my dad’s family immigrated to America, they moved to Cleveland, Ohio. There is a very large Ukrainian & Polish heritage community there. When I was young, I spent a very large majority of my time in Cleveland – a lot of the time with my dad’s family while my mom’s parents were ill & in the hospital. Some of my favorite memories are of my тітка Mary’s home – Sandy’s mother, my dad’s sister, who also raised him for a large part of his childhood. She held big family parties with lots of Ukrainian food, and lots of vodka. She unfortunately passed a few years ago, but I try to channel both her & my grandmother, Olga, through my Ukrainian journey. I wish to be the glue that binds the ancestors to the living to keep our Ukrainian heritage alive & strong.

I wanted to do something special for my favorite двоюрідна-сестра, so I cooked her up a little Ukrainian feast to send in a “care package” ❤️. I’ll take any excuse to cook for people – especially Ukrainian food – it’s my love language. Here is what I made:

Sunflower Oil | соняшникова олія

I did not make this, but wanted to note that when I make Ukrainian food, I always use Ukrainian Sunflower Oil to get as authentic as possible. I love that they make the Ukrainian flag out of the cap 🇺🇦. That’s really cute.

Chebureki | чебуреки

When I asked my cousin what her favorite Ukrainian foods are, she mentioned Chebureki. Chebureki are fried meat pie sandwiches made with usually ground beef, pork, or a mixture of beef & pork together. However, you can make these with whatever ground meat you have available including chicken, turkey, or lamb. I opted for beef (because I realized I forgot to ask her how she prefers them & felt it was the safest option), but next time want to branch out & make the beef + pork mixture. I don’t eat meat, but I imagine a mix of 2 different meats would make for an interesting & unique taste.

I found a recipe for Chebureki in one of my Ukrainian cookbooks and found that you are able to freeze them, which is essential for withstanding the 4 hour (plus rest stops) car ride. They will be kept in a freezer bag to help control the temperature, but will be slowly thawing throughout the car ride so that by the time my parents arrive, they will have a meal ready to heat & serve.

Green Raw Ajika | зелена аджика

This sauce is served with the Cherburki. It has a sweet & refreshing taste, with the perfect amount of subtle heat to follow. It uses jalapeño, green peppers, & lots of fresh Cilantro. It is very yummy!!

Herby White Bean Salad | салат з білої квасолі

Due to the car ride, I had a tough time making a decision for a side to accompany the Chebureki. I didn’t want to send anything that would spoil. Most Ukrainian salads and sides are made with mayonnaise & eggs, both of which don’t sit out well. I decided to go with this Herby White Bean Salad because it did not include either & can be served warm, room temperature, or cold. Plus I got to use some fresh herbs from my garden which makes it extra special.

Kompot | компот

Kompot is a delicious Ukrainian fruit drink that is made using fresh fruit, water, and sugar. It is very delicious and easy to change flavors to what you have on hand, or are in the mood for. I went with a Summer Fruit Kompot because that is what the recipe in my Ukrainian cookbook calls for, and it felt fitting since it’s summer. I used a fruit mixture of Strawberry, Mango, peach, & pineapple. It was very yummy.

You can serve this drink with out without the fruit. I strained as much as I could, but some pulp was left behind. If you choose to  leave the fruit in, you are supposed to serve with long dessert spoons to eat the fruit.

Sunflower Seed Halva | халва з соняшнику

Usually I buy my Halva from my favorite Slavic Deli near me, but I thought with it being shelf-stable, there’s no better time to learn to make my own! I wanted to make sure to send a dessert, but was limited as to what would make the trip. I would have loved to send honey cake, but I didn’t feel that the cream would last very well through the trip.

I found that I really love the smell of toasted sunflower seeds so much! It is so pleasant & cozy. I don’t know why I was so intimidated to make my own – it was SO simple! I made halva packages for my cousin, my dad, & my husband; he is not big on many sweets at all, but he absolutely loves halva!!

When I went to pack up the feast, I realized that someone had stolen one of the Chebureki. While I am displeased with the act of stealing from the package that I had made & portioned out, I am going to choose to look on the bright side and take it as a compliment that they are just that delicious.

I wrote a card letting her know what each item is. I wrote in both Ukrainian & English. She has sent me Christmas cards in Ukrainian language so I assume she is at least familiar with it, but used both languages just in case.

I packaged everything up tight to keep it safe in place then added pretty tissue paper, fake sunflowers (Ukraine’s national flower), and her card.

That is the “care package” I put together for her. It is filled with not only food, but lots of love, care, & good wishes of health & happiness for many more years to come. I would have loved to be there in person to share this meal with her, but with everything going on in both of our individual lives the timing just wasn’t right. So I figured this is the next best thing! 🥰 I hope she enjoys it!

Today’s Bouquet 💐

Mia asked if she could make a bouquet for her piano teacher, Ms. Bayleigh. She is seriously the sweetest 🥰. I really love that she is always thinking of others.

We also took one of our little gift baggies for small items & filled it with wildflower seed mix, then attached it to the vase so that she could start her own little cut flower garden at her home with her son 🌼.

I think that she did such a great job putting this together!! This is definitely how we will be giving out our bouquet gifts from now on!! We could also attach a mini handmade card to each one. She even wants to open a little flower shop in our driveway with mini bouquets to sell! I think we could definitely sell them!!

I am going to begin planning an entrepreneurship class for the kids for this year. We will learn the basics of business & build what inventory we can over the winter – collect vases, make mini handmade cards, Ella sews, etc. Then, when spring/summer comes around & flowers begin to really bloom, we can rent a booth at a local farmers market, the Kids City Flea, and the Kids Market. We are so fortunate to have such great opportunities for child-entrepreneurs here in town. You can never be too small to follow your dreams.

Mia was so excited to bring her flowers to Ms. Bayleigh!! I really hope that it puts a smile on her face. Mia said that she told her that it “she had been having a bad day but that really brightened her day,” and that the mother of the student before her told her that “those are the most beautiful flowers she’s ever seen!” Those compliments made Mia so happy & proud of herself and that sure makes my mama heart happy ❤️.

The Best Thing About The Midwest ♡ Potlucks

As much as an introvert as I am, I will always say “yes” to an event where food is involved. Luckily, I live in the Midwest- where potlucks are aplenty.

We recently joined a new church that really feels like home to us (and might as well be since it’s only a 5 minute walk away)!!

It is small & personal. It is open-minded, community oriented, & is so family-friendly. I’ve never once felt like I have to “mask” around anyone, which truly is a huge comfort to me; I am free to be myself and at the same time be truly accepted and still worthy of God’s love – a totally different experience than I am used to! Every single week there is a Fellowship potluck lunch (or breakfast) where we break bread together and build friendships. So many great things to say about this church. It truly already feels like family to us in such a short time. 

Today’s Potluck

Today I made Vegetarian Borscht with a lazy Garlic Pampushky. I still work morning to night on Saturdays for now so I was just too tired to make them from scratch like I normally do. I bought frozen Parker House Rolls and topped them as I would Garlic Pampushky. It was not the same to me, but it was still so good with the Borscht. Of course I had to bring сметана.

I had only planned to bring borscht, but Niko told me that Americans won’t eat it (I believed him because my mom doesn’t eat ethnic food at all) and that I should bring a second option, with meat. So I made Spicy Chicken Tortilla Soup too, for the meat-eaters. I brought chips to go with that soup. He was wrong and some did eat (and compliment or ask for the recipe of) the borscht. But others ate only the Spicy Chicken Tortilla so maybe he was right, too.

Another mom brought potato pancakes and sausages to serve alongside the Borscht (since that was what I signed up to bring), and another woman brought Peach Cobbler with homegrown peaches from her peach tree, served with a delightful vanilla sauce she made. There was also a yummy chocolate cake with Whipped cream! The same woman who brought the peach Cobbler may have brought that too, I’m not sure. It was good though!!

I’m on my way to being a Potluck Pro at packing/transporting dishes. This is how I walked the Leftovers home 😂. I was late, of course, so Niko walked the kids there while I drove the food in the baskets to carry in once it was finished. It’s better to have good food than rushed food.

When it was time to leave, he gathered the kids and drove them home so I could help clean up and gather my dishes once everyone was finished eating, then walk home. Being able to team work like that is such a blessing.

One of the women recently went on a mission sort of trip and brought all of the women back little handmade trinket boxes. Every single one was different, although some had similar color schemes. They are SO cute! I am so grateful that she included me already being so new! Everyone there has welcomed up with completely open arms, and I am really happy we have finally found the church for us.

Past Potlucks

The first few weeks we did not bring anything. After we went a couple times and decided that we really liked it there, we asked what we could bring to help with stretching meals since our family alone is very large & times are hard. Here are some other dishes I’ve brought over the last few weeks since we have began attending:

I then pushed the youngest kids in the wagon, having Athena hold the corn pudding against the side so it wouldn’t fall over. Sasha walked carrying the cookies.

I really have so much fun planning my dishes for these potlucks each week. I enjoy planning together with the other women to create & bring together wonderful meals. Cooking good food & baking scrumptious treats for others is definitely my love language.

I’m grateful for this new community we have right in our own neighborhood. We have Dinner plans with a couple other families this Thursday, which I will bring dessert, and we have a mom & kid play day planned for Tuesday!

I think I can say that we may have finally found our people!!

Bouquet of the Day 💐

We put together a really pretty bouquet today from our garden to bring over to my parents house to surprise my mom with & brighten her day! 💐 Who doesn’t love being surprised with beautiful flowers?!

When we got there, she had these really cool “Sneezeweeds” {the yellow balls} in a very small vase still left from the bouquet my dad gave her for their anniversary this year, and I asked her if I could transfer them to the bouquet we created for her. They are SO fun!

I asked her if – when she is finished with them – we can attempt to propagate them?! I’d LOVE to add these beauties to my garden!! I love how interesting they look and the awesome texture that it would bring to the look of our garden, plus they are pollinators! I hope we are able to get these babies rooted in our Propagation Station.

I’m pretty impressed with our bouquet making skills! I think we are getting better as we get more practice. I LOVE the way this one turned out! I hope it makes my mom as happy as it made me to make! 💐

Our front flower garden has officially become a Certified Pollinator Habitat through the Cincinnati Zoo & Botanical Garden!!!!

We have put so much time, love, & money into this garden & I am SO proud of this accomplishment and honor! They sent us our yard sign, a packet on the best pollinators for Ohio, a packet of wildflower seeds, and a patch.

Pollination in Action

The Golden Alexanders & Hibiscus are actually in our backyard, but they are still pollinators so I included them. The Hibiscus are especially fun to watch because the bees come out so fluffy when they are done. What a blessing from Mother Nature!!!

I have so many plans to expand our pollinator garden way further once we finish filling in these spaces completely first. We added a lot of these flowers this year and I’m really excited to see how much they grow next year as they become established. Some haven’t even begun flowering yet! I’m especially excited for those ones to come back next year, because the second year is always better.

This is only the beginning of our journey, & the first certification we have planned on our Homeschool Goal List. It’s so cool watching our goals come to life in front of our eyes though! I am teaching my children to not just talk about goals, but actually set out and accomplish them, no matter how long it takes. And how freaking amazing is it that we grew all of those beautiful flowers (and more)?!

Plus, it warms my heart that the kids enjoy creating beautiful bouquets for me & our home from our own garden. This one Sasha made is really, really cute. 💐

We are also currently propagating some more pollinators that we have picked up around town to add to our garden. It’s my secret way to add flowers for free 🤫. Always opt for picking a flower off the ground that has already fallen if possible, rather than picking directly from the plant.

My oldest son gifted me this amazing propagation station and it goes SO perfectly with our science wall.

Thanks to our pollinator garden, our kids have also developed a new hobby: trapping & releasing bees in their bug viewer (or hands, whatever). This is the most Sasha has collected at one time out of our garden:

We also found a mini hive they had started inside one of my watering cans. Unfortunately my children emptied it from the watering can so the bees abandoned it, but it made a super cool addition to our Nature Wall.

Because of this hobby, we will be adding bee hives along the side of our home for them so they can have a safe space to make their hives & honey without anyone interrupting their hard work.

I’m SO excited to add this to our mini homestead! That will be so cool! Hopefully we’ll soon be making our own honey! Luckily, we know some backyard bee keepers to turn to for guidance so that we can turn this new goal into a reality next 🐝.

Veggie Fried Rice | Fast & Stress-Free Meatless Monday Meals

This week we are extra busy with the kids at VBS, on top of their regular weekly commitments so I’m trying to keep our meals as quick & easy as possible!

This super-easy one skillet Vegetarian Fried Rice takes literally 10 minutes to put together and still tastes great! It is so simple and has very minimal clean up- it’s perfect for busy nights!

Since it is so simple, it’s also a great learning dish for older kids to learn to cook on their own (with adult supervision).

Ingredients

  • Butter, for cooking
  • 4 eggs
  • 1 white onion, diced.
  • 1 tbsp minced garlic
  • 2 20 oz bags frozen rice (white or brown)
  • 1 bag frozen mixed veggies
  • 4 tbsp soy sauce
  • 2 tsp Sesame oil
  • Sesame Seeds (option, for serving)

Easy Cooking

  • Scramble eggs & set aside.
  • While scrambling eggs, microwave the Frozen Rice, set aside. Microwave Frozen Veggies, set aside.
  • Sauté diced onions for a minute or two, add garlic & cook until fragrant.
  • Dump in rice, veggies, & eggs. Add soy sauce & sesame oil, mix until all combined.
  • Enjoy! 🥡

Seriously, it can’t get any easier than that!

Ukrainian Halva Fairy French Toast

Our family loves French Toast. It’s such a delicious way to start your morning, but it can be really messy, especially when little hands get ahold of maple syrup.

This is a really fun & tasty way to switch up your French Toast to keep all the deliciousness, but lose the mess! Plus it’s cute as heck and sprinkles are a guaranteed way to start the morning out with a smile. Plus it’s so simple to make!

The halva is already sweet like candy, but with a nutty/toffee-like flavor to it so maple syrup is not needed for this recipe, but if you can’t imagine French Toast without it (like my Ella), go right ahead and add it!

Ingredients

  • Your Favorite Bread
  • 6 Eggs
  • 2 cups Milk
  • 2 tsp Vanilla Extract
  • Cinnamon (as much or little as you like)
  • Butter
  • Ukrainian Sunflower Seed Halva
  • Rainbow Sprinkles (optional)

Directions

  • Whisk together eggs, milk, cinnamon, & vanilla extract in a bowl and pour into a small square or rectangle dish (but still large enough to fit your bread slices).
  • Dip Bread, flipping after at least 10 seconds to make sure both sides get completely covered.
  • Fry in warmed cast iron skillet on medium low for 2 minutes on each side.
  • Spread butter, spread Ukrainian Halva, top with rainbow Sprinkles.

Deer Park Community Little Free Food Pantry 🍞

Around the corner from our home, there are two Little Free Food Pantries that seem pretty abandoned. They are almost always empty, or near empty & have a really un-cared for environment.

They aren’t in the most easily accessible location, and the parking lot is currently being used to store construction vehicles. I feel like they don’t stand out very well so they aren’t being utilized as well as they could be. I’d really like to take these over to beautify them, make them more welcoming & bring them back to life.

We stopped by today to see what was going on with them & what kind of shape they were in, restock them a bit, and pick up trash that was left behind (including a bag of frozen green beans that went so bad in this heat 🤢). Someone has been using the pot as an ashtray, which we cleaned out. They honestly weren’t too bad, just in major need of some love… and some flowers 💐.

I think our first step will be to make some new colorful signs for these Little Free Pantries so that people can be made aware of what they are. I’m going to make that a project for our kids this week. I think that it will be another good lesson to teach our kids to take care of our community, and leaving the world a better place than we found it.

Homeschool Goal | Kid’s Fishtank! 🐠🐡

We are finally crossing another accomplishment off our Homeschool Goal list! 🐟🐟

The kids have been setting up their little Fishtank in the dining room for the past year now! They decided to go with a SpongeBob theme in their fish tank, and it ended up looking so cute!

After it got all set up, we filled up the water, filter, and chemicals for it, then let it sit a few days.

We started out getting 2 Elmerald Green Cory Catfish for our first two fish. They are supposed to be very easy beginner fish & they are very playful, which is something I really wanted for the kids fishtank. The kids named them Bob 🐟 and Fred 🐟.

We had to leave the bag they came home in, in the water for at least one hour to get safely acclimated to our water temperature from theirs.

I didn’t want to add more than 2 in case they didn’t survive the move. As a kid who often won bagged up goldfish from the local Midwest church festival games growing up, I remember the disappointment of excitedly checking on my brand new fish, only to find one floating at the top instead. I wanted to give our kids fish a better chance at life than those poor goldfish ever had.

They are already having a great time hanging out with Spongebob & friends!! They are so fun to watch.

We will be feeding them Algae Wafers & occasional slices of zucchini, squash, cucumber, or pieces of romaine or kale! They are known for eating the Leftovers of fish flakes that reach the bottom as well, so once we add more fish they will have that as well.

Next, I will take one kid each week (youngest to oldest) to pick out their own fish to add to the tank. If you add a bunch of different varieties at once, they will be more likely to die, so it is important to introduce new fish slowly.

Then once each kid picks their own fish, I’ll be adding 2-4 more Cory Catfish. They prefer to have schools of at least 4 or more (if size allows.) Since we already have 2 of the Emerald kind, I will be choosing another variety to add diversity. After that, we will be finished with the kids fishtank and can move onto preparing the fishtank in the living room 🐠.
